If you ask me, eggs are only good in desserts.

I’m not a fan of them alone, no matter how they’re cooked. Scrambled, fried… not for me.

However, I’m not against trying new things (most of the time) and I’m always looking for new breakfast ideas.

These egg cups are a game changer. I think I like them because they’re not alone (there are peppers, onion, Canadian ham and spices thrown into the mix).

One thing’s for sure: these are super easy to make and are totally delicious. What are we waiting for? Let’s dig in!

How to Make Egg Cups

This recipe is short and simple! All you need is:

  • Canadian ham slices
  • Peppers
  • Onions
  • Eggs
  • Seasonings of choice

This recipe is completely customizable – if you want to throw in tomatoes, chives, green onions, etc., go for it!

Egg Cups before cooked

First, preheat your oven to 375 degrees Fahrenheit and spray your muffin tin with a non-stick cooking spray.

Next, place your canadian ham slices into the muffin tins (they won’t all go in perfectly) and throw in your sliced peppers and onions.

I usually put my seasonings in during this stage too, but you can wait to put them on last if you’d like!

Last but not least, crack an egg directly into your ham slices.

Don’t worry if you don’t get it right the first (or second) time around. I had to throw one of the cups away because I accidentally got eggshells everywhere… yikes.

Place these bad boys in the oven for 15-20 minutes.

Quick Tip: If you’re a fan of dippy eggs (also known as sunny side up), I’d bake these for 15 minutes. They’re not going to be extremely runny if you bake them for the full 20 minutes!

Weird, random fact about me – I like some foods slightly overdone (burnt). Bacon, or in this case, canadian ham, is a great example.

Peanut butter cookies are also good when they’re a little burnt 😉 I know, I’m freakin’ strange.

Ingredients

  • Canadian ham
  • Peppers

  • Seasonings of choice

Instructions
